The humble egg takes centre stage in a new book by Lucy O’Reilly entitled Posh Eggs, featuring 70 recipes that make a meal out of this easy ingredient.

There is nothing more pleasing than the tap-tap and the crack that heralds the morning boiled egg, but they can perform so much other culinary magic. Their neutral rich flavour provides and ideal background for a huge array of ingredients, both savoury and sweet.
