Melbourne Cup Luxury at Ellerslie

Ellerslie Racecourse is gearing up for Melbourne Cup, as Executive Chef Paul Barrett prepares to showcase luxury on the menu.

With Melbourne Cup Day looming, chefs at some of New Zealand’s premier racecourses are preparing for one of the busiest days of the year. Paul Barrett, Executive Chef at Ellerslie Racecourse, said that with so much happening across the course to celebrate Melbourne Cup 2025, guests can expect a feast for the senses.

The day will include multiple food drops throughout the day in the racecourse’s grazing-style precincts. Included will be crowd favourites like goat’s cheese with toasted almonds and honey drizzle bites, and pulled pork sliders. Depending on where guests are located across the course, there will be something for every appetite.

Barrett was excited to share that a brand-new experience will be opened in the Moët lounge, which he described as a sophisticated precinct debuting a completely fresh menu format.

Guests will be welcomed with champagne and canapes on arrival, followed by a three-course meal, finished with an indulgent European-style cheeseboard. Menu highlights will include Ahi tuna poke with avocado salsa, citrus mayo, lemon-infused avocado and cured raw fish salad, caramelised duck breast and maple-glazed wagyu. The lounge will also feature Moët & Chandon served throughout the day as part of the beverage package, which he described as the best kind of luxury on race day.

“People love dishes that are fresh, vibrant, and made to share, and they always want to see their favourites back. Our watermelon, strawberry and goat’s cheese salad is a proven hit, so it’s returning across multiple menus this season,” said Barrett.

“It’s all about freshness and colour. Think bright, zesty salads, seasonal produce, and playful flavour combinations that capture the feeling of summer.”

Barrett said the kitchen team are constantly looking for ways to elevate the experience, and this season it has brought 1800 Tequila to the party with refreshing margaritas, as well as a premium range of champagnes. He added that nothing says Melbourne Cup quite like a glass of bubbles in hand.

Above all, Barrett is most excited to see the energy on the course. He said the atmosphere, the food and the fashion make it an exciting day to work in hospitality.
