Fleur Blake has long been a local and legendary baker for Woolworths, having spent more than 25 years perfecting her craft and skills.
Currently in Palmerston North, Fleur Blake was named Baker of the Year 2025, reflecting her tireless efforts and dedication to the role.
Blake began baking at just nine years old, often after school and with her family. She initially worked within the food industry in a range of different roles, until she started at Woolworths in Te Aroha. She has an eye for detail, a passion for food and a flair for creativity with flavour and finishings.
“I have always worked hard to deliver the best I can, whether that's at work for customers or staff or in my home life with family and friends. I love to bake for my friends and family, frequently making birthday cakes for them,” she said.
“I have always had a strong sense of community, helping out at the kids' school when they were little, and at one time running with harriers in Masterton organising the winter series, which was awesome fun.”
Blake said it is always a treat to walk into a bakery, especially at this time of year when the sweet smell of hot cross buns fills the air.
Some of the latest trends to filter through the bakery recently have been the new Cinnabon hot cross bun collaboration, as well as a Japanese cheesecake trend where cookies are combined with Greek yoghurt.
One noticeable customer habit that Blake has noticed has been the move to be more health-conscious, and that plain white bread is not always the best choice.
“I feel incorporating fermented components, such as kombucha glaze or kimchi fillings, could take off. High protein is also taking off and can be easily added to things without compromising flavour. I would love to see citrus such as Yuzu and lemon feature this year with a clean, crisp flavour.”
For young bakers starting out in the industry, Blake said it was important to not be afraid to give things a go, as long as they are willing to learn, ask questions, mix flavours and enjoy what they create.
“Not everything will turn out perfect, but there will always be someone who will love it.”
She said she was grateful to have worked in a company that has allowed her to travel around, working with many varied teammates, whom she has learned from, and continues to learn every day.
“Working with food in a bakery is a passion, not only for creating great products, but also for bringing joy to customers when we deliver awesome service. Treat yourself once in a while and have that piece of cake.”
