Popular Melbourne Restaurant, Supernormal, has launched a month-long celebration of the finest Australian seafood.
The new seafood menu has been curated by chef Andrew McConnell, who was inspired by AI-generated art created for the restaurant. The opportunity has enabled McConnell to work alongside the restaurant’s creative team of Tom Blachford and Nick Cox.
Supernormal’s new menu offers an a la carte lunch and dinner, with selected plates for guests to choose from. The seafood featured on the menu is said to be at its peak season, with plans to swap menu items as the months head into Autumn.
Featured on the menu include South Coast urchin and half a dozen oyesters with kelp crackers, pickled nori, shishito peppers, and hot sauce. Smaller snacks such as Shark Bay scallops roasted in kelp butter, raw Royal red prawns with cucumber, and baked abalone with chicken and conpoy pastry also feature.
Larger plates on the menu include Goolwa XO pipis, and a half or whole Southern lobster. The showstopper of the menu is the House Seafood Tower.
The seafood tower includes Rock Oysters, Mandurah Blue Swimmer crab, North Queensland prawns, marinated Diamond clams, tuna tartare, Fremantle octopus, and Port Arlington mussels with Korean Marie rose and mignonette toppings.
Paired with the seafood offerings is a specially curated wine listing, including fruity tatstes of melon and mandarin, and Manzanilla sherry.
Signature cocktails include the Singapore Sling, inspired by the classic Raffles version, while the Coco Colada has combined fresh young coconut water with Ron Zacapa 23 and house Falernum.
