Two raw oysters held up by two hands

UK-based seafood restaurant chain Wright Brothers has introduced the Half Shell Gin to its cocktail menu. The unique spirit was created in collaboration with bespoke gin experts The Ginstitute distillery as a way to not only complement the restaurant’s various seafood dishes but also repurpose an abundant material.

Carlingford oyster shells are cold macerated in neutral spirit, distilled and then added to the gin. Kelp seaweed and other ingredients like juniper and Amalfi lemon are used to balance out the oyster shell taste.

“The result is a savoury gin with high mineral notes and a pink pepper finish,” shared Ivan Ruiz, beverage manager at Wright Brothers. “Half Shell Gin is the perfect pairing to a cold platter of oysters and best served in a classic gin Martini to balance the briny nature of oysters or seafood.”
