Happy Hour | Bellini

A Bellini is a simple, elegant and refreshing cocktail, and much loved around the world.

Originating in Venice, Italy, a Bellini is a cocktail made by just mixing sparkling wine with peach puree or nectar. Usually, champagne or prosecco is used, but recent and modern variations of the drink have seen anything from sparkling rosé or a sparkling pinot gris.

Legend has it that the shades of orange and peach colours seen in the beverage represent 15th-century paintings by Venetian artist Giovani Bellini, according to a local bartender who invented the drink in the summer of 1948.

In 2023, the Bellini is one of the most famous cocktails around the world, but with new and exciting interpretations of the drink, it’s time to get creative.

A frozen peach Bellini is an easy way to create a delicious alcoholic drink, which can even double as a dessert. By simply adding ice to the mix, and giving it a minute in the blender, this sorbet-like consistency will have customers lining up. 

A Blueberry Bellini is another trend that is making waves. All there is to do is swap out peaches for blueberries, which create a glorious deep red colour. Frozen blueberries can be used year-round for this cocktail.

Embellishing is key with a Bellini, due to the fact that peaches are not always in season. During summer months, a peach slice overhanging on a champagne flute is simple and effective, but during the off-season, try looking further when it comes time for garnishing.

Fresh Herbs are a great way to give it an extra bit of zing, as too are using edible flowers. Be sure to stick with the colour palette though, and use ones that are warm-toned.
