With its first location opening at Camberwell Place in Victoria, Bakers Delight has planned to open 700 new sites by 2030.
The new complex has a production area of only 38 square metres, and its Metro Oven, a key feature of the new kitchen, features a one-meter-wide rack oven that enables multi-bake functionality.
The new format also runs on less than 100 amps, compared to the 140 amps that a standard store would operate on. The product range for the smaller stores has also been stripped back to 54 main items, which Bakers Delight said was approximately 90 percent of what a typical store would offer anyway.
The small stores are also fitted with a hot cabinet, a coffee trial, a dedicated third-party pick-up zone and new signage. Only two bakers are required to operate a small store as well.
Co-CEO of Bakers Delight, David Christie, said that the new model would play a central role in the company’s vision leading into 2030 and beyond.
“It’s early days yet, but this model is a great example of how our tried-and-true business can evolve to meet the needs of a new generation of customers and entrepreneurs,” Christie said.
“We are trialling self-serve coffee. A lot of our morning customers come in for a quick, well-priced snack, and this is an opportunity for them to get their caffeine hit as well.”
The Camberwell store will run for approximately six to 12 months as a proof of concept in order to turn the model into a fully functioning branch of the business.
“This new model is a game-changer for our network. We see this as a good opportunity for franchisees to get a smaller footprint, lower cost store, and a way for our existing franchisees to expand.”
