Having worked in the cafe industry for nearly a decade, Chace Tian became a cafe owner only four years ago and already owns two local cafes in Hamilton. He had always been passionate about food and coffee, which he began consuming as a kid, being the only odd one in his family of tea drinkers.

Tian's commitment to his craft led him to participate in the prestigious Barista Championship last year. This opportunity took him all the way to Athens, Greece, as part of team New Zealand. There, he showcased his skills and had the privilege of connecting with baristas worldwide and meeting top-level coffee legends, including Hanna Teramoto, a two-time NZ Barista Champion.

“As the business grows, I have more opportunities in the coffee industry and get involved more and more,” said Tian.

At Mavis & Co., Tian and his team are committed to offering the best in specialty coffee. Their menu features a variety of options, with a special focus on Geisha Panama, a coffee Tian described as ‘very tasty and also very expensive.’

For Tian, a great coffee is one that offers a balanced body, a clean taste, and an amazing aftertaste. His go-to coffee orders change with the season, preferring an iced latte during summer and a 6oz double shot flat white the rest of the year.

“I have to pass on all my coffee experience to my customers and staff. I have to get people around me to know more about coffee and the industry. I have to find a good balance between education and selling a good product to them.”

As the owner of Mavis & Co., Tian usually has little free time. However, on the rare occasion he does, he spends it with his family and his corgi. He is also active and enjoys sports and CrossFit.

Tian hopes to bring people together and get more attention for the New Zealand coffee scene and the specialty coffee association.
