Established in 2014, Black Garlic Man is a New Zealand artisan business offering garlic produced by inducing natural fermentation with no additives or chemicals. Founder, real estate agent Wayne Harris, shared his secrets of success with the team.

What is your company background, how did you start the business?

“When I saw black garlic on television I thought I would have a go at creating a Kiwi version. Black garlic is sort of caramelised traditional garlic that has its origins in ancient Asian history. It is produced by inducing natural fermentation which is sometimes referred to as enzymatic fermentation. Initially taken in Asian countries, for the associated health benefits of increased antioxidants, the generated S-arylcysteine and other nutrients, black garlic has, relatively recently, quickly become a sought after ingredient/condiment by creative, top-end, modern cuisine chefs throughout the western world.

Black Garlic Man garlic is the result of a four-year-long unaided development which now produces a versatile, quality product that is rapidly growing in popularity.

Further to that the grower who supplies me with the raw product, while not certified organic, certainly farms in accordance with organic principles and I pop out from time to time to monitor progress from planting through to harvest. The high standard of his crop is based on 11 years’ experience and is grown in naturally fertile volcanic soil. I discovered his quality garlic at the local farmers market in Whangarei.”

What are the current product range and variants and how do these products stand out in the market?

“The secret, drawn-out process results in a fruit-like sweet and syrupy gourmet delight that has a texture akin to prunes. The strong and lingering flavours of raw garlic are replaced by a more muted garlic taste, and well-balanced hints of caramelised liquorice, balsamic vinegar, and a suggestion of tamarind.”

“Black Garlic Man was the Cuisine Artisan Awards Winner 2014, and is world leading Black Garlic.”
