– Cholula hot sauce

Rim half of a stemmed cocktail glass with high quality sea salt. Combine the above ingredients into a mixing glass/shaker and shake thoroughly. Double strain to remove foliage. Garnish with one sprig of fresh thyme floating on the surface of the drink.

–  45ml Jose Cuervo Gold Tequila

– 15ml Aperol

– 15ml House made Vanilla Syrup

– 60ml Orange Juice

– 3 dashes Angostura bitters

Shake and strain over crushed ice.Drizzle a small amount of grenadine and let it sink to the bottom and the colours to separate. Garnish with an orange slice and a sprig of mint.

– 60ml Jose Cuervo GC

– 30ml Apple juice

– 15ml Lemon juice

– 10ml Agave

– 10ml Sugar

– Bsp Rhubarb bitters

– 2 Dsh Scarborough bitters

– Fresh Marjoram

– Whole egg white

Dry shake, wet shake and double strain into a chilled coupette. Garnish with sage leaf.
