Setting the Festive Mood in Madrid

Whenever the streets of Madrid are flooded with Christmas lights, its skyline from the seventh floor of Four Seasons Hotel Madrid becomes a glorious sight to behold. In a similar vein, Chef Dani García has designed several special menus full of festive charm to add some Christmas cheer and flavour to the tables at his brasserie in the skies of Madrid. 

“What we have to offer in terms of gastronomy for this special occasion pays tribute to some classic Christmas dishes but with an added special touch by our chefs, Dani García and Ismael Paul, and in the same cosy and elegant surroundings as always,” said Pierre Bauduin, General Manager of Dani Brasserie. 

Everything will begin on the night of December 24, 2023 with a tasting menu that kicks off with a foie gras yoghurt accompanied by Port and Grana Padano; O-Toro tartlet with sea urchin eggs and white soy sauce; and Ossetra caviar. The feast will continue with black truffle risotto in a poultry jus; roasted turbot in a champagne and mushroom sauce; Challans duck royale glazed with lavender honey and spring onion; and roasted yam to finish before the sweetest and most exquisite of desserts: vanilla log made with 74 percent Ceiba chocolate and buckwheat praline.

In turn, the Christmas Day menu opens with a smoked eel snap with hazelnut and lemon; and fried tuna belly brioche and white soy sauce. This will be followed by pickled beetroot gazpacho with Las Landas quail and feta snow; and foie gras royale with a Melanosporum truffle and Jerez Brandy foam. The mains will consist of roasted tuna belly with baby beans in tomato and orange; and marinated venison tenderloin with chestnut purée and Perigourdine sauce. To top all this off, the sweet finish will include lemon, rosemary biscuit and Extra Virgin Olive Oil.

The night of December 31, 2023 will feature a special menu with a wine pairing option that starts with black truffle tart; foie gras au torchon and Timur pepper sablé; and crab tartlet with hazelnut cream. This meal will continue with the iconic Tomate Nitro and green gazpacho with Motril shrimp; and grilled eels with manzanilla pasada and hazelnut velouté. The mains will consist of roasted alfonsino with a winter vegetable ragout; and A5 Wagyu Kagoshima tenderloin with truffled onion and brioche bread. The dessert will also include a citrus option with the lemon confit and cocoa mousse and the hazelnut soufflé with vanilla ice-cream.

Dani Brasserie will also be offering a children’s menu on these three special occasions as well as plant-based options for the three special menus.

After enjoying the menu of your dreams to see off 2023 in style, those choosing to celebrate New Year’s Eve at Dani Brasserie will welcome in the new year with the traditional 12 grapes to mark the start of the first festivities of 2024 that will include a party and live music until the early hours of the morning.
