Following its official opening last November 18, SO/ Hotel’s restaurant, Harbour Society, welcomed its renowned head chef Marc de Passorio. The chef moved to New Zealand from France, where he owned the Michelin-awarded L’Esprit de la Violette. He has 38 years of industry experience, having opened restaurants in places like Singapore, Israel and even Russia where he cooked for Vladimir Putin.

Passorio’s love affair with New Zealand started in 2012 during a holiday visit. It was reportedly a ‘love at first sight’ situation, and when the chef was offered an opportunity to set up the kitchen in Auckland, there was no hesitation. His passion for the country’s clean environment and organic produce is mirrored in his menu creations.

“Nature is alive, I want my kitchen to be the same,” said Passorio in an interview with Denizen.

Diners can expect an ever-changing menu, as the Michelin-starred chef is set on using seasonal produce. An abundance of fresh and vibrant use of fruits and vegetables can be expected, combined with the chef’s award-winning technique and reimagination of French cuisine.
