Hospitality icon Geeling Ching has been a driving force behind various high-profile restaurants during her illustrious career.
During her latest project, Geeling Ching oversaw the refurbishment of Herne Bay culinary icon, Andiamo, which she said wasn’t about trying to reinvent the local favourite, but instead to remind customers why it was theirs to begin with.
“Andiamo has been part of Herne Bay for decades. It holds countless memories and connections for both locals and our team. After eight years of trading in its previous form, it felt like the right moment to bring a renewed sense of energy to something so well-loved,” said Ching.
The refurbishment process was very collaborative. A great deal of time was spent in discovery mode, understanding the “why” behind Andiamo, how guests were using the space, and how the team interacted with their workplace. She described it as a fully holistic review.
One of the main objectives in planning was ensuring the venue could cater to Andiamo’s broad trading style, from casual drop-ins and celebratory dinners to long weekend lunches that roll into the evening.

She said it was essential that the design could transition effortlessly between these moments.
The greatest influence came from the people, both guests and the team, rather than from any trends. The refurbishment focused on staying true to what they wanted the venue to feel like.
The response since reopening has been incredible, according to Ching.
“The anticipation from locals alone was overwhelming. We initially planned a soft launch, but that quickly turned into a full house from day one.”
Operationally, the refurbishment has made a significant impact as well. The team created clearer zones between the bar, dining room and outdoor areas, which improved flow and service speed.
Both the kitchen and bar were upgraded to better support busy services, especially during peak times.
“And of course, I have to mention the bathrooms; they are completely transformed. Guests have literally shaken my hand after seeing the difference.”
Ching said that Andiamo’s home in Herne Bay is a heritage building with its own quirks, but it has beautiful bones.
The approach to the fit-out was about enhancing what already existed. The archway leading into the dining room is a hallmark of Andiamo, and the team knew from the beginning that it would remain untouched.
The design focused on creating warmth and comfort throughout the space. The new look has included rich mahogany tones, flecks of gold, and a beautiful stone-washed clay finish inspired by Italian craftsmanship.
Softer elements were also introduced, such as flowing curtains, terracotta pendant lighting and textured finishes that make the venue inviting at any time.

The bar has become a true focal point and now offers nearly double the amount of seating capacity, which has been enthusiastically embraced by guests.
One of Ching’s favourite new additions is a hand-painted vintage-style “Herne Bay” mirror, created by local artist Sam Burton.
“We wanted something that reflected our heritage, and he captured it perfectly.”
While it is a new chapter for Andiamo, Ching said it still honoured its history. Long-time guests will still recognise the Andiamo spirit, the familiar warmth, the friendly faces, and the sense that it has always belonged to the neighbourhood.
Ching said there is a renewed confidence in what Andiamo and its team offer, which she said has been incredibly rewarding to witness.
The menu has been crafted to balance familiarity with freshness. Italian influences remain at its heart, but it celebrates seasonality and simplicity.
“Who doesn’t love a traditional seven-layer lasagne?”
The menu is also distinctly local, designed to inspire conversation and that enjoyable moment when guests plan what they will share.
“I have to acknowledge our outstanding kitchen team, especially Canada Loucks and Gavin Doyle, who are the creative force behind our new dishes. Their passion and craft are what make the food so memorable.”
Now that the space has been reimagined, the focus has been redirected to building connections and creating memorable experiences. There are some exciting plans underway, including the introduction of Sunday DJs in collaboration with local talent.
“Andiamo has always been about bringing people together, and this next phase is about continuing that spirit in fresh and exciting ways.”
