Sacred Hill’s single vineyard chardonnay is rich and textural and offers lifted aromas of grapefruit, spiced brioche, toasted hazelnut, and subtle, but complex layers of gunflint and toasty vanilla oak. With a lingering aftertaste of lemon curd, yellow peach and toasty oatmeal biscuits, this wine is well suited to pair with a range of foods.
This wine is 100 percent barrel fermented in French oak barriques, 30 percent of which were new, with the balance one-year-old. The wine was aged sur lie for ten months with lees stirring adding richness and complexity. “The dry heat and excellent growing conditions of the season meant that the grapes were showing their perfect flavour profile at harvest,” said Jack Cornes, winemaker. “We know the quirky sub-climates of our vineyard well, and were able to pick our grapes at their absolute best. You can really taste the quality of the fruit in this exceptional chardonnay.”
