Today is the International Day of the Egg, and to celebrate Restaurant & Café has looked at recipes that go beyond the simple – but classic – boiled and fried.
Shakshuka, an egg baked in a sauce of tomatoes, capsicum and onion, is a staple of Arab cuisine, and is popular in those countries as a dish for breakfast and also an evening meal.
One for the Instagram generation – the yolk sitting in a bed of fluffy whites. The whites are beaten with a pinch of salt until stiff peaks form, then the yolk is added and the eggis baked in an oven until the edges of the yolk begin to set.
Dieticians tend to think that cooking an egg into morning oatmeal is a good move, but customers may have other ideas. However, despite images of a sticky mess, egged oatmeal ends up being extra fluffy.
