Meet the Owner/Baker: Sam Osborne, The Fairlie Bakehouse

Co-owner and Baker at The Fairlie Bakehouse, Sam Osborne has always enjoyed working with his hands to create a product.

He first began working in hospitality in the hotel, restaurant and bar scene but in 2009, moved to Fairlie and joined his in-laws at The Fairlie Bakehouse as a barista. When an opportunity arose to work in the kitchen, Osborne gravitated towards it. He started baking in 2013, and began an apprenticeship with Bakels in 2015 and now works hard creating for one of the best known and most awarded pie-shops in the country.

Each pie from the Fairlie Bakehouse is hand-filled with rich, succulent flavour. The menu is constantly changing - offering fresh, cream-filled donuts, home-made bread, muffins, cronuts, raspberry cheesecake and more. Being based in the middle of the South Island’s ‘food bowl’ gives the bakery access to some of the region’s finest ingredients and everything that goes into their bakes is fresh, local where possible, and of the absolute best quality available. Alongside their sweet treats and most popular flavour pies like Pork Belly with Apple Sauce and Crackling, Fine Beef with Mushroom, and Delectable Bacon and Salmon, the bakehouse caters to a range of dietary requirements including vegan, gluten free, dairy free, and vegetarian.

The bakehouse’s current most popular baked item is their almond croissants - which are Osborne's favourite to create.

The baker is methodical and precise in his approach and hopes to continue to grow personally, as well as develop young talent in the upcoming apprentices at the Fairlie Bakehouse. Focused on the integrity of the food, the long term commitment to learning skills pays off and Osborne enjoys getting to be a part of creating products that people love.

The Fairlie Bakehouse is family owned and operated. Sam and his wife, Sophia, work alongside his father-in-law, internationally trained chef Franz Lieber. The tight knit team creates gourmet pies with love fresh on-site daily, shipping nationwide for those not local to Fairlie.
