Chef Mattia Facheris has credited his upbringing as his culinary inspiration as he joins Palmerio Restaurant as Head Chef.
With experience spanning fine-dining kitchens across the globe, Chef Mattia Facheris will bring his refined yet heartfelt culinary approach to his new role as Head Chef at Palmerio Restaurant.
At Palmerio, Facheris is at the helm of the culinary team, focusing on innovation and excellence while drawing inspiration from the Mediterranean coastline and Baja’s natural abundance. Together with Executive Chef Miguel Baltazar, he cultivates a creative synergy in the kitchen, uniting Baltazar’s deep knowledge of Baja Mexican specialities with his own southern European perspective. Facheris’ dishes capture the harmony between land and sea, blending locally sourced ingredients with elevated techniques to craft immersive dining experiences that reflect the destination’s distinctive character.
“Sourcing ingredients directly from the land and sea inspires me to create dishes that are vibrant and full of life. For me, cooking goes beyond flavours; it’s about cultivating moments that linger and surprising them in ways that make every meal memorable,” said Facheris.
Born in Milan, Facheris’ earliest memories of cooking were nurtured in his Nonna’s kitchen, where festive dishes like her signature cannelloni ignited a lifelong passion for food. That passion led him to the Kitchen and Hospitality Management Institute, Olivetti, in Milan, where he laid the foundation for his career and cultivated an appreciation for creating food with meaning and connection. He soon moved to the United Kingdom to join the acclaimed Venetian-style restaurant Polpo, later helping open its Bristol location as Head Chef. Facheris went on to spend two years in the Swiss Alps, where he embraced Alpine-Mediterranean fusion cuisine and developed a deep reverence for regional traditions and a true sense of place in every dish.
His impressive career also includes a tenure as Sous Chef at Four Seasons Hotel Hampshire, where he honed his culinary expertise and enhanced his leadership skills within the renowned Four Seasons brand. Since joining Four Seasons in 2021, Facheris has drawn on his global influences to shape a personal, chef-driven approach that celebrates authenticity and embodies the spirit of community at the heart of the brand.
