AUSTRALIA | Matt Jefferson has set up shop at Brisbane Airport, bringing modern Australian flavours to the Domestic Terminal.
Matt Jefferson, executive chef and owner of Gold Coast institution Social Eating House, has taken the helm at the Domestic Terminal’s The Independent for a six-month residency.
Jefferson is the latest chef to feature in the rotating series, elevating the airport experience for the thousands of passengers and visitors who pass through the airport each day.
Jefferson’s curated menu will offer travellers a chance to enjoy bar bites and fresh takes on classics, such as spice-fried cauliflower and lentil, spinach and ricotta lasagne, against a backdrop of panoramic runway views.
Located near Gate 41, The Independent gives top Australian chefs and emerging local talent an opportunity to plate up their signature dishes and experiment with new flavours over a seasonal, short-term residency.

Chef Matt Jefferson said he was thrilled to bring a high-class dining experience to domestic travellers.
“I can't wait to fire up the pans at The Independent at Brisbane Airport this summer. It’s a great opportunity to bring a taste of Queensland to travellers and showcase some creative new dishes that I’ve been working on.”
The Independent is open daily from 5am to 8pm.
The restaurant is owned by SSP Australia & New Zealand, who specialise in airport food and beverage and operate 16 different sites at the Domestic Terminal. At the International Terminal, 13 new and refreshed dining outlets are on the way as part of the transformation of the terminal, delivering everything from local coffee heroes to global favourites.
Matt Jefferson is the Executive Chef and owner behind Gold Coast institution, Social Eating House and Bar, where he has shaped a dining experience known for modern Australian flavours, refined technique, and a relaxed, share-plate style.
Starting his career at sixteen, Matt worked his way through respected Gold Coast kitchens before opening Social, where he developed his signature approach; honest seasonal ingredients, confident flavour, and dishes designed to bring people together.
His menus highlight local produce, thoughtful combinations, and a strong sense of hospitality. Under his direction, the restaurant has become a long-standing favourite for diners seeking elevated food in an inviting atmosphere.
