Established in 2018, Fiji Fire has been described as the original Fijian hot sauce.

The brand’s ethos has always been to use 100 percent natural recipes and naturally sourced ingredients that are healthy and accessible to all. Fiji Fire’s products are artistic blends of vegetables, fruits, root crops, and spices packed with health benefits.

Fiji Fire founders Gauthier Mescam and Sam Campbell said the sauce has been designed to be enjoyed with practically anything and can be used in many different ways.

“It can be used as a dip or a garnish for fries, burgers, and pizzas, but it can also be mixed with mayonnaise, tartare sauces, or ketchup for a tasty and spicy twist. It can be used as a rub before grilling meats or vegetables or added to simmering sauces to bring up flavours,” said Mescam.

Mescam added that Fiji Fire has become a popular choice for chefs and F&B directors across Fiji and has been used as a table condiment, in daily recipes, and even as an embellishment for cocktails.

Fiji Fire has maintained its commitment to environmental and social sustainability as a primary factor in its decision-making processes. All its ingredients are sourced as close as they possibly can be, with a large network of nearby farmers, women’s garden associations, and backyard growers who are supported with free chilli pepper seeds, basic farming material and organic pest controls and fertilisers in exchange for a year-round supply of their harvests.

All Fiji Fire’s manufacturing processes are operated manually without industrial machinery. The ingredients are washed and prepared by the Fiji Fire team; the sauce is cooked and blended in large stockpots on regular gas stoves and stirred with old-fashioned arm strength. Each bottle is hot-filled at 90°C and is capped, labelled and packed manually one at a time. For perspective, each bottle is handled seven times before it is ready to send out.

Mescam said the hot sauce industry is vast and very competitive, with a target market relatively small compared to other mainstream products such as milk, butter or vegetables.

“First of all, Fiji Fire certainly sets itself apart simply because it is batch crafted here, in our small tropical paradise, with the “Bula” spirit that everyone who has visited Fiji can appreciate. Customers can identify the ingredients with a simple spoon test of our sauces,” he said.

“We are proud to use fresh, non-processed fruits, vegetables, and spices to ensure their flavours are authentic and conserved.”

The Fiji Fire recipe does not use preservatives, additives, or flavourings, and it is allergen-free and suitable for most diets.
