A multi-million-dollar dining pavilion project in Wellington has fallen through, with acclaimed chef Ben Bayly leaving the project.
Located in the Oriental Bay Band Rotunda, the pavilion project was set to offer a relaxed, waterside hospitality and community hub for locals and tourists to enjoy. Ben Bayly joined the project in September last year, where he planned to open a restaurant in the complex.
It has now been revealed that Bayly left the project in March. He said, unfortunately, he simply couldn’t reach commercial terms with the building developer, and parted ways.
Developer Watson Group said that it was in discussions with different operators, and that it had reviewed the project’s timetable, and still intended to open next year.
Although he left the project, Bayly said he would still love to open a restaurant in Wellington one day.
Watson Group said in a statement that the main change with the project was that it was unable to reach final commercial terms with Ben Bayly and his team.
“That was disappointing, given the work invested by all parties, but it was a commercial decision. We remain on good terms and wish Ben and his team well,” the statement said.
"We are now progressing discussions with alternative operators who are well-suited to the building, the location, and the long-term vision for the Pavilion."
At this stage, the Pavilion is still scheduled to open in 2027, subject to finalising operator arrangements, fit-out scope, and construction sequencing.
The Oriental Bay Band Rotunda was originally opened in 1937 and has housed many restaurants in its nearly 90-year history. Known as one of Wellington’s iconic historical buildings, it was closed back in 2012 due to earthquake concerns.
Local brewery Garage Project has also joined the project. Jos Ruffell, co-founder of Garage Project, said being involved has been a ‘pinch me’ moment for both himself and co-founder Pete Gillespie.
"We’ve always believed beer can be creative, social, and deeply local. Pouring Garage Project at The Pavilion, in a space this special, is a bit of a dream. We can’t wait to be part of it."
