AUSTRALIA | Trent Whelan has joined the kitchen team at Pan Pacific Melbourne as its new Executive Chef following a seasoned career.

Pan Pacific Melbourne has announced the appointment of Trent Whelan as Executive Chef, bringing with him years of global culinary experience.

A seasoned hospitality professional, Trent Whelan previously held senior executive roles at Vietnam's Sheraton Grand Danang and Pullman Beach Resort.

In his new role, Whelan will oversee all culinary operations at Pan Pacific Melbourne, including menu development, team leadership, supplier partnerships and the consistent delivery of high-quality food and presentation across the hotel’s on-site dining destination Dock 37 Bar & Kitchen.

“I’m passionate about cultivating a kitchen culture that values creativity, collaboration and continuous improvement, ensuring our team feels both challenged and supported,” said Whelan.

“The opportunity to fuse this philosophy with a vibrant, modern culinary vision is what truly excites me. The hotel’s international brand values, combined with Melbourne’s dynamic food scene, create the perfect platform to deliver memorable guest experiences,” he continued.

With a background in both fine dining and large-scale catering, Whelan is known for his commitment to quality and guest satisfaction. He joins the Pan Pacific Melbourne team with a goal to evolve the hotel's food and beverage offering, amplifying the property’s continued focus on local, seasonal produce and adding a contemporary Italian-inspired direction. Modernising the hotel’s event and conference catering is also a key priority, alongside introducing curated culinary experiences designed to engage both travellers and the local market.

Recently appointed Hotel Manager Carl Forrest was excited for the new talent entering the hotel.

Trent’s arrival marks an exciting step in our ongoing commitment to the guest experience at Pan Pacific Melbourne. We are building a team of fresh, passionate leaders who bring a global perspective and innovative thinking to the table. With new talent like Trent Whelan on board, we’re setting a new tone for the hotel, one that reflects the energy of Melbourne while staying true to the warmth and service the Pan Pacific brand is known for.”
