Meet The Barista | Daniela Fasolo, Tosca

Travel lover Daniela Fasolo grew up in Italy before moving to London and Melbourne. She is currently a barista at a Remeura-based cafe, Tosca, whose menu includes a range of flatties, lattes, cold coffee, plant-based drinks, organic teas and wellness shots. They are also known for their small bites and signature green smoothies.

In the past six years, she has worked in various cafes, which has let her meet many new people and learn to handle challenging situations.

“This is the kind of environment I enjoy because it pushes me to my limit and allows me to learn new things. You get to talk to people from all walks of life and hear their stories,” said Fasolo, who loves making people smile by offering them delicious coffee.

Fasolo’s go-to coffee order is an Italian-style espresso, often switching it up with a flat white.

She feels that balancing acidity, sweetness and bitterness with a smooth sip is key to making a good coffee from high-quality beans, which Tosca sources from Atomic Coffee Roasters, particularly the Veloce blend.

When she is not working or travelling, Fasolo enjoys cooking for her friends and is passionate about football.
