Acclaimed Chef Jamie Pesaque and his renowned restaurant, NUNA, have become a permanent fixture after its first year.
After one year of celebrating its anniversary at Four Seasons Hotel Miami, NUNA has officially secured its permanent home inside the hotel, marking a major milestone for the acclaimed Nikkei concept led by renowned Peruvian chef Jaime Pesaque.
Combining Japanese technique with bold Peruvian flavours, NUNA has quickly established itself as one of Miami’s standout dining destinations since debuting at the hotel. Led by Chef de Cuisine Nazaev Esparza, the restaurant showcases a distinctive Nikkei-inspired menu that has resonated with both locals and visitors alike. The decision to make the concept permanent reflects its strong reception and the hotel’s continued focus on elevating its culinary offerings.
Chef Pesaque’s menu showcases an elevated take on Nikkei cuisine through ceviches, sushi rolls, yakitori, and hot dishes crafted with premium ingredients and bold flavours. Signature dishes include the NUNA Ceviche, featuring a vibrant mix of seafood in leche de tigre; Arroz con Pato, a rich stir-fry of duck and foie gras infused with Nikkei influences; and an assortment of fresh nigiri bites.
As part of this next chapter, NUNA recently unveiled a new Tasting Counter experience, an intimate, front-row dining concept offering guests a closer look at the precision and artistry behind the cuisine. The experience features a curated lineup of elevated bites that highlight premium ingredients, seasonal creativity, and refined technique, while still allowing guests the flexibility to explore the full menu. Highlights from the Tasting Counter include the Royal Crab Croustade, Lobster Blini with caviar, Uni Crispy Rice with bone marrow, Toro Tostada, and Wagyu with truffles.

Chef Pesaque is widely regarded as a pioneer in modern Peruvian cuisine. His flagship restaurant, Mayta, has earned international acclaim, including recognition on The World's 50 Best Restaurants list. At NUNA, he brings that same globally inspired perspective to Miami through a menu centred around vibrant Nikkei flavours, premium seafood, wagyu, caviar, and refined presentations.
