The new Gibbons Hotel has introduced a fresh and modern take on the classic Kiwi pub within the heart of the capital.
Wellington is about to get its newest social headquarters. Opening December 8, Gibbons Hotel brings a fresh, modern take on the classic Kiwi pub to the corner of Dixon and Taranaki Streets, blending heritage character with lively, contemporary energy.
Housed within the historic Hope Gibbons Building, the venue pays tribute to the legacy of Hopeful “Hope” Gibbons; local businessman, brewer and civic leader. The reimaging of the former Jack Hackett’s space marks a new chapter of this iconic address, one rooted in community, craftsmanship and good-old-fashioned hospitality.
Inside, the transformation is immediate. Timber panelling, warm lighting and soft-leather booths create a relaxed yet polished atmosphere with a long timber-clad bar anchoring the room.
A refreshed layout, including an enclosed street-front alfresco, raised dining stage and semi-private function room, makes it easy to settle in, whether it’s a quick pint, team lunch or a full-tilt night out.
Multiple screens are integrated throughout the venue, culminating in a show-stopping six-metre-wide Simtec LED screen (6m x 2m). As a major feature wall and a huge drawcard for sports lovers, it brings a true grandstand feel to game days and cements Gibbons Hotel as one of Wellington’s best places to catch live sport.
Vintage-inspired sporting memorabilia nods to New Zealand’s proud sporting past, giving the space a nostalgic clubhouse feel without losing its modern edge
Designed for long lunches, after-work drinks, late-night dancing and everything in between, Gibbons Hotel is set to become the central city’s go-to destination for food, sport, music and connection.
On the menu, Head Chef Suranga Thushara and Executive Chef Dylan Kemp deliver elevated pub fare with the unmistakable character of the capital.
The offering leans into classic Kiwi comfort with a refined twist agria chips with kiwi onion dip, braised lamb shoulder tacos, Canterbury lamb rump, ale-battered fish sando and a wagyu beef burger that’s destined to become a local favourite.
Snacks are perfect for grazing over drinks, while pub classics and larger plates showcase New Zealand produce with playful sides and sauces, all designed for a relaxed yet elevated dining experience.
“Gibbons Hotel is all about celebrating the spirit of Wellington - welcoming, energetic and a little bit cheeky,” said Venue Manager Brayden Holman.
“This is a place where you can catch the big game, tuck into a great meal, or stay for the live music and kick-on vibes. We want everyone who walks in to feel like they’ve just found their new local.”
