Research has found that one in ten cups of coffee in Australia are made with soy milk, and it is a trend that is more than established in New Zealand. The shift towards soy has been prompted by a number of reasons – for some it is for health reasons, and for others it is a chance to explore and experiment with how their coffees taste. Soy is breaking into the mainstream of coffee consumption, and developments over the years have meant that it is becoming easier to use in a café setting.
