A Day to Remember

As the country welcomed in the New Year, Rachael Speedy from NZ Premium Foods was proud to collaborate with Ricky Bennett a Hāngī  Master to cook a traditional Maori hāngī alongside Executive Chef Volker Marecek and his team from Auckland’s exclusive Cordis Hotel earlier this month.

The magical day was spent in the beautiful surrounds on School Road in Waimauku, for the hospitality group learning how the umu (pit oven) is prepared. Lining the baskets with Puka and Banana leaves, adding beautifully preprepared seasoned meats and vegetables by the team, then lowered into the earth's oven for cooking and secured with dampened sacks.

Amidst the morning sun, the group were treated to a scenic bushwalk set out on the rural property, learning tales of the Maori and the bush, whilst paying homage to our ancestors with the history and learning about the special and edible characteristics of our native plants in Aotearoa. Finishing with an informative quiz, even using leaves to make bird calls, it made for an entertaining morning!

The day’s Hāngī represented the true spirit of hospitality. A social celebration, a shared meal cooked from the earth and a karakia to bless our good fortune and the food. Producing succulent off the bone meats and delicious vegetables using the foodies range of salts and seasonings, infused with the smoky earthy flavours of the traditional cooking method. The team did themselves proud, it was a gourmet feast prepared by chefs from 11 different nationalities each adding their flare to the Kiwi kai.
