Bloody Mary Oysters

 

The Oyster Inn, Waiheke

 

250ml tomato juice
40g gherkins
25g horseradish
40g Worcestershire sauce
1tsp cumin powder
1tsp coriander powder
½ tsp cayenne pepper
½ tsp Szechuan or black pepper
½ tsp chilli powder
2tsp flakey sea salt
1 lemon zest and juice
2 anchovy fillets

 

  1. Toast all the spices and grind them fresh for maximum flavour.
  2. Finely dice the anchovies and gherkins, add all other ingredients apart from the salt and lemon.
  3. Whisk together then add the lemon and salt ½ at a time to get the seasoning correct.
  4. Shuck the fresh oysters, spoon the dressing on, garnish with crispy shallots, coriander and enjoy.
