Jerk is a style of cooking native to Jamaica, in which meat is wet marinated in a hot spice mixture. It’s great for marinating chicken wings, lamb ribs, pork belly and fish steaks. Fantastic dipping sauce for Buffalo wings and lollypop prawns. Use as a basting sauce for any roast, ideal for a whole salmon.
